Packaging for Cloud Kitchens: Choosing Compliant Takeaway Trays for Delivery-Only Brands

04-10-2026

A delivery-only kitchen needs packaging that survives a stacked bag, a tilted scooter ride and a reheat at the customer's end, which makes the seal and the coating the two decisions that matter most. The food is cooked correctly long before the pack is chosen, so the pack is where a delivery brand either protects its reputation or loses it.

Cloud kitchens differ from dine-in venues in one practical way: no member of staff sees the pack again after it leaves. This guide covers what to look for in a takeaway tray, how the main formats differ, and what to send a manufacturer when you request samples. For the material itself, see our explanation of what bagasse packaging is.

What a delivery-only kitchen needs from its packaging

A delivery pack has to stay closed under load, hold heat or cold for the length of the trip, and present the food properly when it is opened. Molded fiber supplies the rigidity and the shape, and the functional film supplies the barrier that a sauce-heavy menu demands.

Because nothing is adjusted after packing, the pack is specified against the worst case rather than the average: the fullest bag, the longest trip and the heaviest item at the bottom. Our laminated trays are ≤ 5% plastic and our film-free range is 100% plastic-free, and the film-free range suits cold, non-sealed components only.

Why compliance lands on the packaging, not the kitchen

Where single-use packaging rules apply, the obligation falls on the packaging a brand puts into the market, so a delivery-only operation carries the same exposure as a restaurant with a dining room. That makes documentation part of the purchasing decision rather than an afterthought.

The documents to keep on file are the same set a retailer would request. Our laminated trays are PFAS-FREE (ND, < 10 ppm), the certification set is FDA, LFGB, OK Compost Industrial and ABAP, and the supporting test reports cover REACH, POPs, PFAS, PPWR total fluorine and BPA, all listed in our certification and test report section, so a brand can request the full set from one place rather than assembling it item by item.

Choosing between sealed trays, containers and clamshells

A film-sealed tray controls leakage best, a lidded container handles a mixed menu with fewer parts, and a clamshell is the quickest to fill for high-volume lines. The choice follows from the menu and the packing speed rather than from the material.

Sealing changes the equipment requirement, because the film and the tray rim have to be matched before the line is set up. Our bagasse heat seal food trays are supplied as a tray and film system for that reason, and the mechanics are covered in our guide to whether bagasse trays can be heat sealed.

Keeping food intact through the delivery window

Two failures account for most delivery complaints: leakage from a sauce, and a crisp item arriving soft. Both are packaging decisions, and both are settled by the coating and the closure rather than by the food.

Rigidity under a load is part of the same requirement, because a pack that flexes in the bag spills what it holds. The behaviour of fiber under load is examined in our analysis of fiber strength under load, and the material options for takeaway formats are compared in our survey of takeaway box materials.

Matching the pack to the menu type

Menu typeWhat the pack has to doWhat to specify
Hot bowls and rice dishesHold heat and resist leakage in a tilted bagA sealed laminated base, the film for the reheat method, and seal behaviour on the finished pack
Grilled and fried itemsStop a crisp item from steaming on the wayA shallow format or a vented closure, and a coating that resists grease
Salads and cold bowlsKeep dressing away from the fiber baseA laminated base and a closure that contains the dressing
Multi-item ordersCarry several components in one bag without mixingCompartment layout and the stacking height the bag allows
Sauces and sidesStay closed when packed against heavier itemsLid or film retention under load, and the rim width left free for the closure

The table is a starting point, because the pack that works is the one drawn around your own menu and packing line.

What to specify before you order

A useful enquiry describes the order rather than the material. Send the menu items and their sauces, the delivery window you need to cover, whether the pack is sealed, lidded or closed, the bag and stacking arrangement, and the volume you run on a peak day.

Where the format already exists as a plastic tray, the outer dimensions can be reproduced rather than redesigned, and our 1:1 plastic tray replacement process keeps the footprint your packing line is already set up for. Formats already proven for sealed delivery service are compared in our guide to plastic and bagasse meal prep containers.

Frequently asked questions

Does a delivery-only kitchen need different packaging from a dine-in venue?

Yes. A delivery-only kitchen has to design for a longer hold and rougher handling, so the seal and the stacking behaviour matter more than they do for food eaten on the premises.

Is a sealed tray necessary, or is a lid enough?

A lid is enough for a firm menu with little liquid, and a sealed tray is the safer choice for sauces, gravies and any pack that will be tilted. The menu, not the brand size, decides which one applies.

How do we keep fried food crisp in a fiber container?

By managing moisture rather than by choosing a heavier container. A shallow format, a vented closure or a separate compartment for the crisp component all address the same problem.

Will a fiber pack hold up in a stacked delivery bag?

Yes, provided the base rigidity and the closure are specified for a stacked load. Rigidity is a property of the molded base, so it is confirmed on a loaded trial rather than estimated from the tray alone.

What compliance documents should a delivery brand keep on file?

The food-contact documentation together with the certification and test report set, because the brand that puts the pack on the market is the one asked for it. Our laminated trays are PFAS-FREE (ND, < 10 ppm) with FDA, LFGB, OK Compost Industrial and ABAP certification.

Need samples for a delivery-only menu?

Hebei Mountain Environmental Protection Technology Co., Ltd. manufactures laminated bagasse trays and supplies film structures in PP, PET, CPET, PLA, EVOH-enhanced and PBAT-based options, with 30+ production lines for volume supply. Our mold library holds more than 3,000 in-house molds, and we develop 200+ new molds each year.

Send us the menu, the delivery window and the packing line, and we will confirm which base and film suit the service and which samples to run. Please contact our team to start the request.
